Every liquor has a story behind it, but few are as event full as RUM’s: Slavery, Armadas, Communist revolutions, and er.. Jack Sparrow & Sailor Jerry all give weight to Rum’s bad boy image.
Distilled from one of the Caribbean’s most abundant crops, sugar cane, and ranging in colour from transparent through to a dark molasses brown, Rum forms the base of some of the world’s classic cocktails like Pina Cola, Daquiri and Mojito. The combination of Caribbean limes and a sweetener will always bring out the true flavours of the spirit.
Nothing is more simple or more Caribbean than this drink put together by Juan Gonzales-Goya, bartender at Birmingham’s new Sri Banana Leaf restaurant, himself a Cuban exile who’s grandfather owned a sugar plantation in pre-Castro times.
We do hope that Barbancourt and the numerous other Haitian Rums will continue to be in supply after the recent disaster there.

2 shots Brugal Anejo golden aged Dominican Rum
A generous squeeze of lime
1 Teaspoon of ginger passed through garlic press
Fentimens Ginger Beer (itself mildly alcoholic)
Pour over plenty of ice and stir.
garnish with a wedge of lime
